Anton Holzapfel opened a bakery on South Tenth Street in 1912. His daughter married a man named Olsen. Their grandson is still here every Tuesday morning at four, mixing dough.

Anton Holzapfel came over from Hungary in 1909, opened the bakery on South Tenth Street in 1912, and was famous for two things: a Saturday-morning rye that brought half of Little Bohemia to his door, and a willingness to feed anyone who didn’t have a nickel.
His daughter married a Norwegian baker named Olsen in 1948. Their grandson runs the shop now. Same address. Same hours. Same kolache recipe Anton wrote down on the back of a flour-sack tag in 1916, which we have framed by the register.
